The annual volume of the proceedings of the Oxford Symposium has been produced by Prospect Books since its inception in 1981. The subject of discussion in 1996 was 'Food and Travel, but, since the papers cover not only food suitable for travelling, but food written about by travel writers or travellers, and food that has itself travelled from its place of origin, we adopt a more inclusive tide. There are more than 40 essays on subjects ranging from the domestication of western food in Japan, to cooking on board ship in the 17th and 18th centuries, the transmission of the Arabic culinary tradition to medieval England, the influence of travel writers on modern Australian cooking, and the travels of the peanut.
